Chocolate Chip Coconut Cookies

Chocolate Chip Coconut Cookies w/ Whole Wheat and Oatmeal

  • 2  1/4 c of flour (soft white, milled on pastry setting)
  • 1 c oats (old fashioned)
  • 1 t baking soda
  • 1 t sea salt
  • 1 c softened butter
  • 1  1/2 c sugar (raw caneevaporated cane juice etc)
  • 1/4 c raw honey
  • 2 lg eggs (free-range)
  • 1 T vanilla
  • 12 oz chocolate chips (I used enjoy life)
  • 1 c coconut, shredded

Preheat oven to 350. Mix sugar and honey in a bowl and sit aside. Put flour, oats, baking soda and salt into a food processor or blender and blend about 30 secs. In your mixing bowl beat butter until creamed or until lighter in color. Add your sugar and honey mixture, eggs and vanilla and mix until incorporated. Mix in flour mixture and then finally add in the coconut and chocolate chips.

Shape cookie dough into 1″ balls and place on cookie sheet. Bake 10-11 min. Let cookies cool slightly before moving them from the cookie sheet to a cooling rack.

Vanilla-Cinnamon Pancake Syrup

Do you sometimes wish you had other flavors to put on your pancakes besides maple? Do you try to eat healthy but find the maple syrup prices CRAZY?  Or (like me) did your kids scarf down your maple syrup and you are left with dry pancakes getting cold on your plate? Well, worry no more, here is a simple easy pancake syrup recipe to solve your problems 😉

     Vanilla-Cinnamon Pancake Syrup

  • 1 c honey (I use raw, unfiltered)
  • 1/4 sugar (I used organic evaporated cane juice on this but whatever sugar you have will work)
  • 1/2 – 1 t vanilla extract (to your liking)
  • 1/4 – 1/2 t cinnamon (to your liking)

Combine all ingredients and heat on low heat until all ingredients are well combined and mixture is thoroughly heated.  Serve on your pancakes, waffles or sausage.  Store in fridge for 2 weeks.  Reheat to serve again.

Honey Sugar Scrub

Honey Sugar Scrub

  • 2 c sugar (I use raw cane)
  • 20-30 drops essential oil (don’t use photosensitive oil if going in the sun after using)
  • 1.5-2 T vanilla extract (optional)
  • 1 t  Vitamin E Oil
  • 1/2 c honey
  • 1/2 c extra virgin olive oil (I use organic)

Combine all ingredients, store in a lidded container in bathroom, or better yet right in the shower where you can reach lol.

Broccoli Slaw

     Broccoli Slaw

  • 4-5 c shredded broccoli, red cabbage and carrots (or bag of organic already shredded)
  • 3/4 c mayonnaise (add more or less for desired liquid ratio)
  • 1/4 c honey (I use raw local honey)
  • 2 T sugar (I use Turbinado raw cane sugar, but you can use honey granules, succanat, etc)
  • 2 T white vinegar
  • salt and pepper to taste

Combine all ingredients and stir, to reduce graininess of sugar, allow to sit in fridge for 30 min prior to serving.

Homemade All Natural Ketchup

This is so easy, why in the world have I been buying the expensive organic ketchups when I could just make it?  yeah, I don’t know either.

 

     Ketchup

  • 24 oz Tomato Paste (I used Kirkland, organic)
  • 1 c Honey (I used raw, filtered)
  • 2 c White Vinegar
  • 1 c Water
  • 1 T + 1 t Evaporated Cane Juice (organic, sugar)
  • 1 T sea salt
  • 1 t onion powder
  • 1/2 t garlic powder

Combine all ingredients in a kettle on the stove, heat on low and whisk until it starts to bubble.

Reduce heat and simmer for 20 min.  Remove from heat and let cool.  Chill before serving, store in sealed container in the refrigerator.
