Italian Roasted Potatoes with Andouille Sausage

what I used in ()

  • 6 Russet Potatoes (organic)
  • 4 Andouille Chicken Sausages (Open Nature)
  • 4 TBS Butter (Simply Organic unsalted)
  • 1 TBS Parmesan (Messana grated)
  • 1 tsp Italian Seasoning (bulk from Sprout’s)
  • 1 tsp Garlic Powder (Simply Organic)

Preheat oven to 350º.  Cut potatoes in half long ways then slice about 1/4″ thick.  do the same to the sausages.  Cut butter up into pieces.  Spray a glass casserole dish (5x7ish) with cooking spray or butter, then make three layers of: Potatoes, butter, italian seasoning, garlic powder then sausage (do not put parm in until dish is done).  After all ingredients are layered in dish place in oven for 20-30 min.  Stir ingredients to get bottom potatoes to top and vise versa then cook an additional 20-30 min.  Remove from oven and sprinkle with the Parmesan.  Totally on my favorites list, I loved it, so glad I had to wing it for breakfast this morning that I discovered this amazing dish!!!

Honey Mustard Baked Salmon

  • 1-1.5 lbs   Salmon Steaks
  • 1/2 c   Raw Honey
  • 3 TBS   Prepared Mustard
  • 1/4 tsp   Onion Powder
  • dash Pepper

Preheat oven to 450°.  In a small saucepan, over low heat, combine honey, mustard, onion powder and pepper and stir until well combined.  Remove from heat.  Pat dry Salmon Steaks and place in a baking pan.  Coat with 1/2 of the glaze and cook in oven for 12-15 min.  Remove from oven, plate and finish with rest of glaze.

Homemade Real Food Chocolate Icing

  • 3 cups powder sugar, to make this I put a mixture of  organic coconut sugar and organic raw cane sugar in a blender until I had 3 cups of powder sugar 😉
  • 3/4 cup organic cocoa powder
  • 1/4 tsp organic vanilla extract
  • 1 stick of grass fed butter, room temperature
  • 1/4 cup water or (raw) milk

Fold the powder sugar and cocoa powder together.  In a mixing bowl beat butter and vanilla together until creamy.  Add in 1 cup sugar and cocoa and on tablespoon of water and mix thoroughly, continue doing that until all ingredients are well blended.  You may add more or omit some water to get the consistency you like.

Natural Insect Repellent Spray

It is getting close to that time of year that you want to begin thinking about keeping those insects outside of the house.  Wouldn’t you rather do it without chemicals?

Natural Insect Repellent Spray

  • 2 cups water
  • 2 cups white vinegar
  • 10 drops peppermint essential oil
  • 10 drops rosemary essential oil
  • 10 drops citronella essential oil
  • 10 drops lemongrass essential oil
  • 10 drops tea tree essential oil

Mix together in a spray bottle and spray around doors, windows and other problem areas.  You can even spray outdoors around sitting areas etc.

Milled Wheat Biscuits – Soaked Grains

I found this recipe that called for soaking your grains and adding apple cider vinegar to the recipe and thought…hmmm, well, maybe..  This is now my new favorite biscuit recipe 🙂

Milled Wheat Biscuits-Soaked Grains

  • 2 1/2 cups milled wheat flour (I milled soft white wheat berries)
  • 6 tablespoons high-quality butter
  • 3/4 cup milk
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons aluminum-free baking powder
  • 3/4 teaspoon sea salt

Put flour in a bowl and cut in the butter until a crumble forms.  Add milk and apple cider vinegar.  Cover with dampened dish towel or cheese cloth and allow to sit overnight to soak your grains.

After the soaking period, add the baking soda, baking powder and seasalt.  Knead these ingredients into the dough, approximately 10-15 kneads.  Roll dough out to just under desired thickness of biscuits.  Cut into biscuits.  You can use a biscuit/cookie cutter for round biscuits, but I just cut mine into squares/rectangles like the girl did from the original recipe and it worked out great.

Bake at 450˚ for 8-10 min or if baking on a stone about 11-13 min.   We ate ours with gravy made from bacon grease and milled wheat.  Well, I also snuck some in with strawberry preserves for a snack 😉

Brown the beef with the minced onion and garlic, add remaining ingredients and bring to a boil. Reduce heat and simmer on low for 10 min. Serve on Dinner Rolls for awesomeness!

Dinner Rolls – milled wheat

  • 1  1/3  cup  Warm Water
  • 1/3  cup   Extra Virgin Olive Oil (I use this)
  • 1/3 cup   Honey (I use raw, I try to get local)
  • 2 tsp   Sea Salt
  • 1   Egg (free range)
  • 4  1/2  cup   Milled Wheat Flour (I milled 2 cups hard red 1 cup hard white)
  • 1 TBS  Dry Active Yeast

Combine ingredients in order into your bread machine.  Choose dough setting.  Once timer beeps remove and knead about 5-7 times then pull off balls of dough about the size of 1/2 your fist and shape.  Place rolls on cookie sheet and allow to rise for about 30 min then bake at 350 degrees for about 20 min or until golden brown.  I used these to serve sloppy joes on 🙂

Hydrating Salve

I am making and shipping orders of my hydrating salve. This salve is super moisturizing, naturally healing for your skin, and a little goes a VERY, VERY long way. The base is grapeseed oil, beeswax and coconut oil I add vitamin E and customize with essential oils. (i.e. you may want lavender, tea tree and geranium for a mild case of eczema or eucalyptus, peppermint and lavender for osteoarthritis, eucalyptus and lavender to sooth muscles etc) The salve is $18 for a 4 oz jar. I just started offering this in my shop. I hope you enjoy.

Parmesan Garlic Crusted Chicken Strips

  Parmesan Garlic Crusted Chicken Strips – gluten free

In a bowl, whisk together eggs, mayonnaise, lemon juice, water, and minced garlic then sit it aside.

Put your oats in a blender and blend until it is a powder. In another bowl, combine oat powder, both Parmesan cheeses, pepper, salt, Italian seasoning, and garlic powder.

Bang chicken breasts/strips down to about 1/4-1/2 inch thick.  Pat dry.

Take each breast/strip and coat both sides in the dry mixture, then dunk in egg mixture, then back into dry mixture on both sides again.

Place onto a thoroughly greased (I used coconut oil for this) cookie sheet or tin pan and bake at 350 degrees for about 40 min or until golden brown and thoroughly cooked through.  I like to serve with marinara sauce.
