Snicker Doodle Bars – gf, df 


Snicker Doodle Bars

Main Part:

Cinnamon Sugar Mixture:

Combine cinnamon sugar mixture ingredients in a bowl, then sprinkle half on bottom of an 8×8 dish and set aside. In separate bowl combine main part ingredients, then pour over the half of the cinnamon sugar mixture in the 8×8.  Sprinkle remaining half cinnamon sugar mixture over the main part as topping. Place in freezer for at least 4 hours or overnight. Cut into squares and serve, store in refrigerator.

Eggs – in a muffin tin..

I like biscuits and English Muffins.  I also like making breakfast sandwiches.  I seen a pin on Pinterest for cooking eggs in a muffin tin to make them round, I WAS going to try and use a mason jar ring on a skillet to see if I could get a round shape, but trying the muffin tin sounded easier.  Here are my eggs in a muffin tin.  Some are scrambled and some are not.  I only ate the not scrambled ones, they were delish!

Directions:

real difficult… get your pen and paper.. okay, ready?

Break open egg into greased muffin tin (I used coconut oil).  Bake at 350 degrees for 10-18 min depending on how done you would like your egg, keep in mind the egg will continue to set/cook after you remove it from the oven.  If you want the scrambled ones, scramble the egg up in a bowl first.   Shewwwwie that was rough! 😉

We ate these with sausage, and a homemade honey-butter spread on English Muffins, they made for a delicious, quick and easy breakfast.

Diatomaceous Earth Detox Drink

     Diatomaceous Earth Detox Drink

  • 8oz water
  • 1T lemon juice
  • 1T apple cider vinegar
  • 1T raw honey
  • 1t diatomaceous earth (food grade)

Combine all ingredients and drink.  If you can’t drink it all in one go, be sure to stir again before your next drink.

Kefir Smoothie (Probiotic, Antioxidant)

Kefir Smoothie

  • 1 cup fresh organic fruit
  • 1/2 organic kefir (I use pomegranate milk kefir)
  • 1/2 frozen organic berries
  • 1/4 cup frozen organic spinach (smoothie in picture has a little less because I ran out)
  • 1 T raw honey
  • 1 tsp diatomaceous earth, food grade
  • A pinch each of organic cinnamonturmeric and cayenne

Combine all ingredients in blender and blend until smooth.  If you prefer a more frozen type smoothie, you can switch the amounts of frozen versus fresh with your fruits and berries. This smoothie has strawberries for the frozen berries and the fresh fruits are a combo of strawberries, blueberries, pineapple and watermelon.

Spicy Southern BBQ Chicken

This recipe I used to make years ago.  I came across the recipe recently and decided to give it a try using organic ingredients instead of  *cough* what I used to make it with. Here is what I did and it turned out quite nicely, definitely a repeater.

     Spicey Southern BBQ Chicken

  • 2 lbs Chicken pieces (I like to use strips of breast meat)
  • 1 med Onion, sliced
  • 1 c  Chicken broth
  • 2 T  Vinegar
  • 2 T  Worcestershire sauce
  • 2 T  Chili powder
  • 2-3 T  Honey, Maple syrup or other natural sweetener of your choice
  • 2 t  Hot pepper flakes
  • Black pepper to taste
  • dash or two of turmeric

Place chicken in a 9×13, then place onion slices over top of the chicken.  In separate bowl, combine remaining ingredients and stir well. Pour mixture over chicken and bake at 350 for 1 hour or until cooked thoroughly, basting with mixture occasionally.

Healthier Seasoned Sausage Balls

  Seasoned Sausage Balls (HGN Style)

  • 5 cups of my Quick Mix Baking Mix
  • 2 1/2 lbs sausage (you can use beef, pork, turkey or chicken; I used all natural pork here)
  • 3 cups shredded raw cheddar cheese
  • 1 t minced onion
  • 2 t Italian seasoning
  • 1/2 t garlic powder
  • 1/4 t turmeric

Combine all ingredients and mix thoroughly until all ingredients are incorporated entirely and it is all sticking together…. yes, this will require your hands so remove your jewelry and scrub up ;).  Pinch off enough to roll into 1-1 1/2 inch balls and place on cookie sheet.  Bake in 350º oven for 20 minutes or until cooked thoroughly and a nice browning has taken place.  Yields approximately 85-90 sausage balls, so adjust recipe to the size you need or freeze the extra for quick breakfasts or snacks. My kids like them with ranch dressing, my bbq (you can buy that here) or maple syrup, I like them plain. ENJOY!

Vanilla Blueberry Apple Cinnamon Water

Say What?!?!

Okay, so this started out as an apple and cinnamon water, but as I was putting it together I just started throwing other things in….. sooooo anyway, here is what we got:

Vanilla Blueberry Apple Cinnamon Water

  • 2 Apples, diced
  • 1 c Blueberries
  • 2 Cinnamon Sticks
  • 1 T Cinnamon Powder
  • 3 T Honey
  • 2 t Vanilla Extract
  • 2 Gallons Water

Put all ingredients together and refrigerate overnight.  Drink off water for the next two days, you can add water, vanilla and honey to the mixture if you run out, but pitch after two days.

Strawberry-Banana Oatmeal Smoothie

So I have been seeing a lot of neat recipes floating around on facebook lately and you know me, I HAVE to try it at least once if it looks good and isn’t too dependent on processed foods.  So here is my:

     Strawberry-Banana Oatmeal Smoothie

  • 1/4 c uncooked old fashioned rolled oats
  • 1 1/2 t dried chia seeds
  • 3/4 c almond milk
  • 1/4 c orange juice (I used pineapple juice in this picture b/c SOMEBODY drank the oj)
  • 1/4 c yogurt (I use organic, hormone, anti-biotic free)
  • 1/2 c fresh sliced strawberries
  • 1/2 c fresh sliced bananas
  • 1/2 t vanilla extract
  • 2 t honey (I use local/raw)

In blender add your oats and chia seeds. Blend on high until texture of flour.  Add milk and juice to blender and blend well making sure to get the oats and chia up into the mixture with a spoon or spatula.  Add yogurt and blend.  Add strawberries and bananas, then blend.  Add vanilla and honey and blend on high until desired smoothness is obtained.  Transfer into jar and refrigerate overnight.  Will keep in fridge for 2-3 days. Shake before drinking.

Blackberry-Sage Antioxidant Water

I have seen all these really cool drink ideas and I was like…. I … want….to …..go…. to…. there….!!!!  Sorry, television program reference.  Anyway, this is my take on making these drinks; since they are super healthy and I want them to be available to my kids whenever they are thirsty for ‘more than water’ I bought a 3 gallon drink dispenser to sit on the counter.  This way they can have one of these super healthy ‘waters’ whenever they want and it’s super convenient for them.   I put the jug in the fridge at night and out on the counter during the day.  There is a nifty little core in the middle that you keep filled with ice to keep your drink cold.  Our first one:

     Blackberry-Sage Antioxidant Water

  • 10 cups water
  • 1 cup blackberries, lightly crushed
  • 3-4 sage leaves

Combine ingredients.  Sit in fridge over night, can keep adding water as it gets low and drink out of it for the next 48 hours.  Then discard fruit and leaves and start over.  I made this recipe x3 for my family.

PS-That handsome fellow in the background is my youngest cutting up our zucchini for dinner.

Parmesan Crusted Zucchini

Parmesan Crusted Zucchini

  • 2 med sized zucchini
  • 2 T extra virgin olive oil
  • 1/4 t salt
  • 1/4 c panko (I know, I know, but I had it and waste not.. right?)
  • 1/4 c parmesan (I used grated)
  • pepper to taste

 

 

Cut zucchini into 1/4 inch slices.  Toss with oil.  In separate bowl combine pepper, salt, panko and parmesan.  Pat each side of zucchini into panko mixture.  Lay zucchini slices out flat on a greased cookie sheet and bake at 400º for 25 min.
