All Natural Chicken n Dumplings

All Natural Chicken n’ Dumplings

  • 2 lbs free range chicken breast meat
  • 96 oz free range organic chicken broth
  • 2 teaspoons organic ground pepper
  • Dumplings:
    • 5 cups milled wheat flour (I milled a mix of organic hard and soft white wheat berries)
    • 12 tablespoons grass fed butter
    • 1  1/2  cups water
    • 2 Tablespoons organic apple cider vinegar
    • 1 teaspoon organic baking soda
    • 3 teaspoons organic aluminum-free baking powder
    • 1  1/2 teaspoon sea salt

I combined the flour, butter, water and apple cider vinegar together and let sit.  Then I put the chicken in the oven and let cook at 350 degrees, after thoroughly cooked, remove from oven and shred.  As the chicken was cooking in the oven, I put the chicken broth and pepper in a kettle and began heating on medium heat.  I waited about 15-20 minutes then added the rest of the dumpling ingredients to the dough and kneaded them in, then rolled out the dough and cut into about 1-2 inch squares with a pizza cutter.  At this time, I raised the heat on broth to bring to a boil. Once boiling, I added the dumplings one at a time and moving them around gently to make sure they all submerged.  I boiled them on high for 5 min., then turned the heat down to medium, covered and cooked for another 15 min., if the broth isn’t thickening enough you can add some more flour to it to thicken it.  Add cooked and shredded chicken at any time after the dumplings are in.  Once dumplings are cooked through remove from heat and serve.

*Note that the dumplings are going to be brown not white when you use fresh milled wheat so it drastically changes the appearance.

Breakfast Cake Muffins

I hade been making this recipe for Breakfast Cake quite some time now, so I was very excited to try this recipe for Breakfast Cake Muffins when she came out with it. I usually use the ENTIRE bag of chocolate chips though not the 1/2 cup she calls for 🙂

Breakfast Cake Muffins

  • 2 c whole wheat flour (I milled hard white)
  • 2 c whole rolled oats
  • 1 t sea salt
  • 1 t baking soda
  • 1 c butter, melted
  • 3/4 c milk or buttermilk (me: almond milk)
  • 3/4 c honey (me: raw, local)
  • 2 eggs (me: free range)
  • 1 t vanilla
  • 1 bag of Chocolate Chips (I usually use enjoy life)

Stir together flour, oats, salt and baking soda. Add butter, milk, honey, eggs and vanilla. Fold in chocolate chips. Spoon batter into 12 buttered muffin tins. Bake at 350 in the oven for 20-25 min.

Pancake and Sausage Muffins

Hey, I like pancakes and sausage, why not make them together in an easy and convenient muffin??? You can eat this just as they are, or like I did with real maple syrup.  I found this recipe here.

    Pancake and Sausage Muffins

  • 2 c whole wheat flour (I used soft white wheat)
  • 1 t baking powder
  • 1/2 t sea salt
  • 1 1/2 c milk or buttermilk (I use raw dairy or almond milk)
  • 2 eggs
  • 1/3 c melted butter
  • 1/2 lb cooked sausage

Mix dry ingredients first, then add milk, eggs and butter, stir in the sausage last.  Pour into buttered muffin tins.  Makes about 18 muffins.  Bake at 350º for 15-20 min.
