Homemade Real Food Chocolate Icing

  • 3 cups powder sugar, to make this I put a mixture of  organic coconut sugar and organic raw cane sugar in a blender until I had 3 cups of powder sugar 😉
  • 3/4 cup organic cocoa powder
  • 1/4 tsp organic vanilla extract
  • 1 stick of grass fed butter, room temperature
  • 1/4 cup water or (raw) milk

Fold the powder sugar and cocoa powder together.  In a mixing bowl beat butter and vanilla together until creamy.  Add in 1 cup sugar and cocoa and on tablespoon of water and mix thoroughly, continue doing that until all ingredients are well blended.  You may add more or omit some water to get the consistency you like.

Grilled Italian Mozzarella and Tomato Sandwiches (Whole Wheat)

per sandwich:

Generously butter one side of a slice of bread, place butter side down in skillet over med-low heat.  Layer mozzarella to cover slice, place tomatoes on top of mozzarella, sprinkle Italian seasoning on top of tomatoes. Top with generously buttered bread, butter side up.  Cook in skillet until side down is golden brown, flip and cook until other side just as golden 😉 viola!

Serve with my Seasoned Tomato Soup from Sauce for an excellent meal!

Mashed Parmesan Garlic Cauliflower

 

Mashed Parmesan Garlic Cauliflower

  • 1 head cauliflower
  • 1/4 shredded Parmesan cheese
  • 1-2 T real butter (you can use olive oil here but I don’t like the taste of it in this)
  • 1 t dried oregano
  • 3/4 t garlic powder
  • salt & pepper to taste

Wash cauliflower and cut into pieces and boil on stove for 7-10 minutes (until tender when pierced with fork).  Drain cauliflower and place in a bowl.  Mash the cauliflower then stir in the rest of the ingredients.

Chocolate Chip Coconut Cookies

Chocolate Chip Coconut Cookies w/ Whole Wheat and Oatmeal

  • 2  1/4 c of flour (soft white, milled on pastry setting)
  • 1 c oats (old fashioned)
  • 1 t baking soda
  • 1 t sea salt
  • 1 c softened butter
  • 1  1/2 c sugar (raw caneevaporated cane juice etc)
  • 1/4 c raw honey
  • 2 lg eggs (free-range)
  • 1 T vanilla
  • 12 oz chocolate chips (I used enjoy life)
  • 1 c coconut, shredded

Preheat oven to 350. Mix sugar and honey in a bowl and sit aside. Put flour, oats, baking soda and salt into a food processor or blender and blend about 30 secs. In your mixing bowl beat butter until creamed or until lighter in color. Add your sugar and honey mixture, eggs and vanilla and mix until incorporated. Mix in flour mixture and then finally add in the coconut and chocolate chips.

Shape cookie dough into 1″ balls and place on cookie sheet. Bake 10-11 min. Let cookies cool slightly before moving them from the cookie sheet to a cooling rack.

Hamburger Pie with Almond Flour Crust

Hamburger Pie

  • Pie Crust
    • 1 1/2 c Almond Flour
    • 1/4 c Butter (I use grass-fed)
    • 1 tsp Sea Salt
  • Pie Filling
    • 1 lb Ground Beef (I use grass-fed)
    • 1 T Butter
    • 1 Onion, chopped
    • 1/2 c BBQ Sauce (I make my own)
    • 1 c Lettuce, chopped
    • 1 Red Bell Pepper, chopped
    • 1 Avocado, chopped
    • Sea Salt and Pepper to taste

Pie Crust:

In a large bowl, combine the almond flour, butter and salt.  Blend until a doughy texture takes shape.  Press the dough out into a 9″ pie dish, making sure all surface is covered.

Pie Filling:

Preheat oven to 350º F.  Sauté onions in the butter until they begin to become slightly translucent.  Add the ground beef to the onions and cook until the beef is thoroughly cooked.  Mix the BBQ sauce in with the beef and add salt and pepper to taste.  Pour the beef mixture into the crust and cook in the oven for 30 minutes.  Remove from oven, add lettuce, avocados and peppers then serve.

Fried Apples with Cinnamon

This was a delicious addition to our breakfast. I hadn’t planned on adding it to the blog, but it was too tasty not to share.

Fried Apples w/ Cinnamon

  • 8-10 c Apples, sliced and peeled
  • 1/2 c Butter (I used organic from grass-fed)
  • 1 c Sucanat (Evaporated Cane Juice, you can use sugar or brown sugar if don’t have this)
  • 2 T honey (omit if you use the brown sugar)
  • 1 T Cinnamon

Melt butter on low in a large skillet. Add the rest of the ingredients, mix well, cover and cook on low until desired tenderness.  I cooked mine on super low for about an hour, stirring occasionally.

Applesauce Bread

I originally found the recipe for this bread here.  I made a few adjustments, but either recipe is really good!

     Applesauce Bread

  • 3 1/2 c fresh milled flour (I used hard red)
  • 2 1/2 t cinnamon
  • 1 t baking powder
  • 1 t baking soda (I use aluminum free)
  • 1/2 t sea salt
  • 1/2 t nutmeg
  • 2/3 c honey (I use raw/local)
  • 1 1/3 c applesauce (organic)
  • 4 eggs (free range)
  • 1 stick butter, melted (grass fed)

Mix dry ingredients in a mixing bowl, make a pit in center, add rest of ingredients, mix well, pour into a buttered bread pan. Bake at 350º for 45-55 min. or until toothpick comes out clean.

OR you can make this version, which is more applesauce(y) and has more cinnamon and no nutmeg:

  • 3 1/2 c fresh milled flour (I used hard red)
  • 1 T cinnamon
  • 1 t baking powder
  • 1 t baking soda (I use aluminum free)
  • 1/2 t sea salt
  • 2/3 c honey (I use raw/local)
  • 2 2/3 c applesauce (organic)
  • 2 eggs (free range)
  • 1 stick butter, melted (grass fed)

This yields an even more moist loaf 😉
