Tyler’s Mexican Pizzas

My oldest son, Tyler has decided to start making some of the meals and has graciously offered to allow me to blog his meals as well.  Tonight he begins his journey with Mexican Pizzas and boy, they are DELICIOUS!!!!

     Tyler’s Mexican Pizzas

Fry onion & beef together in a skillet, drain.  Add refried beans and taco seasoning and simmer on low heat for about 5 minutes.  In a skillet, fry your tortilla shells in oil on med-hi heat, flipping to cook evenly on both sides until golden in color (about 30 seconds each side). Tyler used Avocado oil for frying pouring enough in to put about 1/4 inch in skillet.

Preheat oven to 350 degrees.  Lay 6 fried tortillas out on a cookie sheet (we were working with a small cookie sheet, so only two fit at a time) then spread 1/6 of meat mixture onto them.  Top meat mixture with another fried tortilla and top that with about a spoonful of the taco sauce and a handful of cheddar cheese.

Bake in oven until cheese is melted, approximately 3-5 min.  We topped ours with lettuce, tomato, black olives and Greek yogurt.

BBQ Bean Chili

Don’t you love those days when you haven’t made it to the grocery store yet and your inventory is running kinda low.  You go to the pantry to see what you have the ingredients to make and of course you need 1-2 more ingredients to make ANYTHING that you normally fix.  Although, some may see this as a perfect excuse to get creative and wing it.  For some reason *cough cough*, this happens to us a lot (ok, the real reason is ….I hate strongly dislike grocery shopping)

BBQ Bean Chili (no, it isn’t your imagination, you DO see the word BBQ on my blog a lot)

For frying beef:

Add all above ingredients to a deep skillet or other large pot and cook on medium heat until meat is thoroughly cooked, lightly drain and return to skillet or pot. (if you aren’t eating clean grass fed meat, drain completely)

 For the rest:

Add second list of ingredients, stir until combined, cover and simmer on low for 1 hour stirring occasionally

serves 4-5

Healthier Seasoned Sausage Balls

  Seasoned Sausage Balls (HGN Style)

  • 5 cups of my Quick Mix Baking Mix
  • 2 1/2 lbs sausage (you can use beef, pork, turkey or chicken; I used all natural pork here)
  • 3 cups shredded raw cheddar cheese
  • 1 t minced onion
  • 2 t Italian seasoning
  • 1/2 t garlic powder
  • 1/4 t turmeric

Combine all ingredients and mix thoroughly until all ingredients are incorporated entirely and it is all sticking together…. yes, this will require your hands so remove your jewelry and scrub up ;).  Pinch off enough to roll into 1-1 1/2 inch balls and place on cookie sheet.  Bake in 350º oven for 20 minutes or until cooked thoroughly and a nice browning has taken place.  Yields approximately 85-90 sausage balls, so adjust recipe to the size you need or freeze the extra for quick breakfasts or snacks. My kids like them with ranch dressing, my bbq (you can buy that here) or maple syrup, I like them plain. ENJOY!

Meatloaf

For this recipe I use grass fed beef, free range eggs, and organic ingredients.  I really enjoy this recipe, it has been my most successful meatloaf yet.

     Meatloaf

  • 2 lbs ground beef (grass fed)
  • 2 lg onions
  • 2 eggs
  • 2 c Rolled Oats
  • 1 T dry parsley
  • 1 1/4 c ketchup (I use my homemade ketchup)
  • 3/4 c bbq sauce (I use my homemade bbq of course 😉
  • salt & pepper & turmeric to taste (I try to put at least a little turmeric in everything b/c of its anti-carcinogenic properties in case you were wondering why it kept popping up lol)

Chop onion, mix all ingredients, adding sauces gradually until desired consistency.  Bake at 350º until done (usually about an hour). You can mix this recipe up the night before and allow to sit overnight, or even freeze it in the loaves then thaw the day before you want to bake it. Serve with veggies of choice!

Sirloin Steak w/ BBQ

I told you I was a huge BBQ junky, I meant it really.  Yes, I did serve my sirloin steak with BBQ sauce (hubby being a meat love ate his without the BBQ, so feel free to do the same).

Sirloin Steak w/ BBQ sauce

Preheat oven to 375º.  Place steak on cookie sheet.  Pour Worcestershire and garlic powder over steak and bake in oven for about 50 min or until desired done-ness flipping about every 10 min after the first 20.  Remove from oven, cut into serving sized pieces for your family, pour bbq sauce over top of steak.

I served mine with broccoli slaw and mashed potatoes.

Beef BBQ

Okay, I’ll admit it, I am a bbq junky! I love bbq anything! I have recently taken to making up my own bbq sauces when I’m cooking because we don’t care for the store bought organic varieties much.  Hope you enjoy this one, I know I did.

Beef BBQ

  • 2 lbs stewing beef (I use grass fed pastured beef)
  • 3-4 c chicken broth (I use organic free-range)
  • seasonings for cooking beef: garlic powder, onion powder, black pepper, cumin, turmeric, dry mustard, chili powder
  • seasonings for bbq sauce: garlic powder, onion powder, black pepper, turmeric, chili powder
  • ketchup
  • honey
  • liquid smoke

Slow cook beef in chicken broth and seasonings for cooking beef on low for 4-6 hours or until fully cooked but tender and juicy.  Drain meat and pull apart into shreds.  For the sauce, I mixed ketchup honey and seasonings for bbq sauce with a few drops of liquid  smoke, I am sorry I don’t have more accurate measurements, I have a bad habit of dash it, mix it, taste kind of cooking.

Lasagna

I made this recipe with noodles I made following this recipe, making them from my fresh milled wheat.

     Lasagna

  •     1 batch lasagna noodles
  •     1 lb ground beef { grass fed of course }
  • ≈  1 lb Ricotta cheese
  • ≈ 1/2 lb Mozzarella cheese, shredded
  • ≈ 6 oz Cheddar cheese, shredded { I use raw if available or hormone/antibiotic free at least }
  •     1 jar spaghetti sauce
  •      garlic powder, italian seasoning, minced onion to taste
  •     1 1/2 T olive oil

Cook noodles in boiling water or broth for 20-25, I add about 2 Tablespoons of olive oil to it to keep them from sticking.  Brown ground beef adding garlic powder, italian seasoning and minced onion for added flavor.  Add in spaghetti sauce (if you are not cooking with grass fed/clean meat, you will need to drain first then return to skillet) and simmer for 5-10 min.  Layer noodles, then 1/3 sauce mix, then half of the ricotta and half of the mozzarella, repeat, then last layer is noodles, remaining sauce mix, and the cheddar.  Top with the olive oil drizzled across the top and sprinkle with italian seasoning.  Bake at 350º for approx 35min.  Serve with garlic bread.. yum.

Chili-Basic Recipe

Chili is something I make ALL the time, and I can guarantee you, I have not made it the same 2 times in a row.  The basics are the same but chili is so easy to add your own personal variations to, that you can have lots of fun with making it your own. Oh yeah, and remember, I use organic ingredients and my beef is grass fed.

Jen’s Chili

  • 32 oz tomato juice
  • 30-60 oz chili beans (2-4 cans)
  • 2 lbs ground beef  (I will reduce to 1lb when the budget is a lil tight){grass-fed}
  • 1 onion diced
  • 1 green pepper diced
  • 1/2-1 t   dry mustard
  • 1/2-1 t   turmeric
  • 1-2    t   cumin
  • 2-4    t   chili powder
  • 1-2    t   garlic powder
  • 1/2-1 t   black pepper

Fry up your beef with the peppers, onions and half of the garlic powder.  Combine this and remaining ingredients in crockpot and cook for 4 hours on high or in a pot on stove and simmer on low for 2 hours.

Sloppy Joe

I just want to make note that I used grass fed beef and organic ingredients the only exception being the Worcestershire sauce.  I used Lea & Perrins original, which was the only brand I could find without HFCS.  Next I am going to try an organic brand I seen at Sprout’s. This recipe I got from one of my favorite sites: Heavenly Homemakers

     Sloppy Joes

  • 2 lbs ground beef {grass fed}
  • 2 T minced onion
  • 1 c ketchup
  • 1 t prepared mustard
  • 1/4 t garlic powder
  • 1 T Worcestershire sauce

Brown meat with minced onion and garlic powder.  Add the remaining ingredients and allow to simmer for a few minutes. I served on my homemade Garlic Onion Rolls.
