Coconut Breaded Shrimp

(what I used in parenthesis)

 

Set oven to 350 degrees.  Clean and pat dry shrimp.  Get three shallow bowls for your prepping stations.  In bowl 1 add your flour and seasonings, bowl 2 is your eggs, bowl 3 is your coconut flakes and bread crumbs.  Coat shrimp in bowl 1 then bowl 2 then bowl 3.  Place on cookie sheet that has been sprayed with cooking spray.  Cook for 10-12 min, turn and cook and additional 7-10 min or until golden brown.  Serve however you like shrimp, I prefer to dip them in my homemade bbq sauce lol

Broccoli, Cheese and Ham Omelet

Ham, cheddar and broccoli omelet

 

Broccoli, Cheese and Ham Omelet

(what I use in parenthesis)

  • 2   eggs (free range, farm fresh)
  • pinch sea salt (here), dash black pepper (here)
  • 1 TBS    butter (organic, grass fed)
  • 1/4-1/2 c   ham, diced (varies)
  • 1/4-1/2 c   broccoli, steamed, chopped (organic, frozen)
  • 1/4 c   cheddar cheese (raw)

Heat a skillet over medium heat.  Add your butter. Take your two eggs and break them open in a bowl add the salt and pepper, beating until fully combined and a little fluffy.  As the butter starts to lightly bubble, pour the eggs into the skillet.  I like to make holes as it is cooking for the runny parts to drain into, so that I can flip the egg over once it is good and set.  Quickly add your remaining ingredients to one side of the omelet and flip the other side over onto it.  Remove from heat and place a lid over the skillet for about a minute to let the cheese get all nice and melty (I skipped this step in the omelet pictured above because I was too anxious to get started on it lol).  Slide onto a plate and serve.

Frittata: Asparagus, Ham and Cheddar

Frittata: Asparagus, Ham & Cheddar

(what I used in parenthesis)

6   eggs, beaten (farm fresh, free range)

1/2 c   cheddar (raw)

1/2 t   black pepper (organic)

dash   sea salt

1 TBS   butter (grass fed, organic)

1/2 c   ham pieces

1/2 c   cooked asparagus pieces (organic, fresh)

1/4 t   dried parsley (organic)

Turn oven on broil.  Combine eggs, cheese, pepper and salt with a fork.  Place oven safe skillet over medium heat and add butter, once butter starts to bubble, add asparagus and ham and saute for 2-3 min.  Add eggs, stir gently, continue cooking 5-6 min or until eggs are set up on bottom.  Sprinkle parsley on top and place in oven and broil for another 5-6 min, until brown and fluffy.

OR… if you are like me and do not have an oven safe skillet (yet), you can cover the frittata as it is cooking on the stove and pull up the edges every so often letting liquid slide under and cook until the top is set…. fauxttata… 😉 you’re welcome.

Basil, Tomato & Mozzarella Skewers

  • Mozzarella balls
  • Cherry or Grape tomatoes
  • Fresh basil leaves
  • Olive oil
  • Sea salt
  • Pepper

VERY simple appetizer!  Cut your mozzarella balls in half, cut your tomatoes in half, slice your basil into about 1/2-1 inch squares.  Slide basil, tomato and mozzarella onto skewers (alternating) then drizzle with olive oil and sprinkle with salt and pepper to taste 🙂 Very yum, very fresh and lite!

Homemade Real Food Chocolate Icing

  • 3 cups powder sugar, to make this I put a mixture of  organic coconut sugar and organic raw cane sugar in a blender until I had 3 cups of powder sugar 😉
  • 3/4 cup organic cocoa powder
  • 1/4 tsp organic vanilla extract
  • 1 stick of grass fed butter, room temperature
  • 1/4 cup water or (raw) milk

Fold the powder sugar and cocoa powder together.  In a mixing bowl beat butter and vanilla together until creamy.  Add in 1 cup sugar and cocoa and on tablespoon of water and mix thoroughly, continue doing that until all ingredients are well blended.  You may add more or omit some water to get the consistency you like.

All Natural Chicken n Dumplings

All Natural Chicken n’ Dumplings

  • 2 lbs free range chicken breast meat
  • 96 oz free range organic chicken broth
  • 2 teaspoons organic ground pepper
  • Dumplings:
    • 5 cups milled wheat flour (I milled a mix of organic hard and soft white wheat berries)
    • 12 tablespoons grass fed butter
    • 1  1/2  cups water
    • 2 Tablespoons organic apple cider vinegar
    • 1 teaspoon organic baking soda
    • 3 teaspoons organic aluminum-free baking powder
    • 1  1/2 teaspoon sea salt

I combined the flour, butter, water and apple cider vinegar together and let sit.  Then I put the chicken in the oven and let cook at 350 degrees, after thoroughly cooked, remove from oven and shred.  As the chicken was cooking in the oven, I put the chicken broth and pepper in a kettle and began heating on medium heat.  I waited about 15-20 minutes then added the rest of the dumpling ingredients to the dough and kneaded them in, then rolled out the dough and cut into about 1-2 inch squares with a pizza cutter.  At this time, I raised the heat on broth to bring to a boil. Once boiling, I added the dumplings one at a time and moving them around gently to make sure they all submerged.  I boiled them on high for 5 min., then turned the heat down to medium, covered and cooked for another 15 min., if the broth isn’t thickening enough you can add some more flour to it to thicken it.  Add cooked and shredded chicken at any time after the dumplings are in.  Once dumplings are cooked through remove from heat and serve.

*Note that the dumplings are going to be brown not white when you use fresh milled wheat so it drastically changes the appearance.

First combine salt, pepper, garlic powder, chili powder, parsley and turmeric in a bowl.  Cover roast in this dry rub (you can sit back in fridge for 20 min or continue to next step)  Pour chicken broth into crock pot and place the roast in. Cook in crock pot on low for 5-6 hours or until meat is done and easily pulled apart.  Once meat is done, remove roast and pour the roast juices into a bowl and sit aside.  Shred meat and put back into the crock pot.  Add a 1/4 – 1/2 cup of the reserved juices and the BBQ sauce. Cook in crock pot on low for an additional 1/2 – 1 hour.  We served these on dinner rolls.

I bought my buffalo at a local farm here in AZ called Adam’s Natural Meats.  All my seasonings were organic, my chicken broth was grass fed organic and the BBQ Sauce is my all natural homemade bbq sauce.  You can try this recipe with a pork or beef roast, cooking times may vary.

Natural Insect Repellent Spray

It is getting close to that time of year that you want to begin thinking about keeping those insects outside of the house.  Wouldn’t you rather do it without chemicals?

Natural Insect Repellent Spray

  • 2 cups water
  • 2 cups white vinegar
  • 10 drops peppermint essential oil
  • 10 drops rosemary essential oil
  • 10 drops citronella essential oil
  • 10 drops lemongrass essential oil
  • 10 drops tea tree essential oil

Mix together in a spray bottle and spray around doors, windows and other problem areas.  You can even spray outdoors around sitting areas etc.

Eggs – in a muffin tin..

I like biscuits and English Muffins.  I also like making breakfast sandwiches.  I seen a pin on Pinterest for cooking eggs in a muffin tin to make them round, I WAS going to try and use a mason jar ring on a skillet to see if I could get a round shape, but trying the muffin tin sounded easier.  Here are my eggs in a muffin tin.  Some are scrambled and some are not.  I only ate the not scrambled ones, they were delish!

Directions:

real difficult… get your pen and paper.. okay, ready?

Break open egg into greased muffin tin (I used coconut oil).  Bake at 350 degrees for 10-18 min depending on how done you would like your egg, keep in mind the egg will continue to set/cook after you remove it from the oven.  If you want the scrambled ones, scramble the egg up in a bowl first.   Shewwwwie that was rough! 😉

We ate these with sausage, and a homemade honey-butter spread on English Muffins, they made for a delicious, quick and easy breakfast.
